I expect that some people have suggested this in the past - but is there a way to have both orders combined together.

I know they arent strictly speaking in the 'same' universe, but having them in one order would be great, Im currently tying to put all the films, TV series and video game play throughs in order and then I will start on the audio books, but jumping back and forth between orders is a pain.

No, there isn't. The orders are just too incompatible, Especially after Jedi, it is impossible to follow both, since they go in wildly different directions

I agree, once you hit the force awakens/ New Jedi order it falls apart, but up to that point I havent seen a particularly troublesome point.

EG - why cant Rebels be in the legends order?

It clashes with the post revenge of the sith stuff pretty hard too.

And the more stuff they add in the in between point between the original and prequals, there will be more divergence.

Tarkin (the novel) for example is completely counter to what you learn about tarken from Legends books. Thrawns backstory changes too. Building of the death star? Yep, that is different.

Yeah, I read all the prequel stuff from both orders together, and it meshes fine, but then after Revenge of the Sith it really very, very much doesn't.

They've also published several books & stuff that fall in-between the prequels and original trilogy over the last year. The more that gets published in the canon universe, the further the two orders will diverge.
