Yeah, I get that, I was just trying to bring out the semantics and point out that muscles are organs and so are all the edible parts of plants, pretty much. So that about covers everything humans eat.

You could list what you won't eat, but in the interest of keeping it simple, I think something like "no internal organs" will get the point across (although
technically skeletal muscle is "internal," the term usually refers exclusively to the digestive, respiratory, and circulatory organs). Maybe "nothing above the neck" could be appended to make it clear that you're not eating any brains or tongue.
Actually, if you're limiting your diet to only ordinary meat, you could probably just say something like "only skeletal muscle, except tongue" ... this excludes the muscle type that the other organs are made up of.
And I assume you don't eat hot dogs or other sausages?
Although I heartily (pun intended) encourage you to start eating the other parts of the animals. No joke, tonight I had liver and onions (I hadn't had it in a long time, and when I saw it on the menu I thought of this thread and had to order it lol), and it was delicious. And if you aren't eating

menudo the next morning, you're missing out.
